Blini are thin, yeast-based pancakes with a delicate texture and mild flavor.
Their fine layers make them easy to pair with a variety of toppings, while a short rising period helps create their characteristic light texture.
Ingredients
For the Batter
- 2 cups all-purpose flour
- 2 cups warm milk
- 1 cup warm water
- 2 large eggs
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 teaspoon instant yeast
- 2 tablespoons unsalted butter, melted
- Extra butter for the pan
For Serving
- Sour cream
- Jam
- Honey
- Cream cheese
- Fresh dill or chives
Prepare the Batter
Combine the warm milk, warm water, sugar, and yeast in a large mixing bowl. Let the mixture stand for about 10 minutes.
Whisk in the eggs, salt, and melted butter. Gradually add the flour, whisking until the batter is smooth and free of large lumps. The consistency should be thin enough to spread easily across the pan.
Let the Batter Rise
Cover the bowl with a clean kitchen towel and leave it in a warm, draft-free place for 40 to 60 minutes.
The batter should become lighter and develop small bubbles on the surface. Once it reaches this stage, it is ready to cook.
Cook the Blini
Heat a non-stick skillet or crepe pan over medium heat and lightly grease it with butter.
Pour a small amount of batter into the center of the pan. Immediately tilt and rotate the pan to spread the batter into a thin, even circle.
Cook until the surface is set and the edges begin to loosen. Carefully flip the pancake and cook the second side briefly until lightly golden.
Transfer it to a plate and repeat with the remaining batter, lightly greasing the pan as needed.
Add the Toppings
Serve the blini warm with toppings that complement their mild flavor. Jam or honey provides a sweet finish, while sour cream or cream cheese adds a creamy contrast. Fresh dill or chives can provide a fresh herbal note.
Cooking Tips
- Keep the batter thin: If it becomes too thick after rising, add a small amount of warm milk.
- Use medium heat: This helps the pancakes cook evenly without excessive browning.
- Grease lightly: A thin layer of butter is enough to prevent sticking.
- Spread the batter quickly: Rotate the pan immediately after pouring for an even layer.
- Avoid overcooking: Remove each pancake once it is set and lightly golden to maintain its tender texture.
Storage and Reheating
Allow leftover blini to cool before placing them in an airtight container. Separate them with parchment paper if necessary.
Refrigerate for up to 3 days and reheat gently in a skillet or microwave until warmed through.
Blini are simple to prepare when the batter has the right consistency and the pan is kept at a moderate temperature. Their delicate texture and mild flavor make them suitable for a range of toppings, from sweet options such as jam and honey to creamy or herbal accompaniments.
