After the dough is made, it is scalded with boiling water to slightly harden the surface of the bagel and to form the small holes left in the center.

Ingredients:
High gluten flour 350g
Dry yeast 5g
Fine sugar 25g
Salt 5g
Warm water 200 ml
Hot water 2 liters
Corn syrup or honey 30g
White and black sesame seeds in appropriate amounts
Steps:
(1) Mix high-gluten flour, dry yeast, granulated sugar, and salt well, add warm water, and mix into a dough.
(2) Place the kneaded dough on a flat work surface and knead by hand for 10-15 minutes until the surface of the dough is smooth and elastic.
(3) Place the dough in a bowl and ferment until the dough becomes twice as large.
(4) Place the fermented dough on the work surface, knead and deflate, divide into 8-10 equal portions, and knead each dough into a ball shape.
(5) Flatten the ball with the palm of your hand and use your fingers to press out the small hole in the middle to form a dough similar to a flat circle.
(6) Pour hot water into a pot, add corn syrup or honey, bring to a boil, and add the dough.
(7) Cook for 15-20 seconds, then turn over and cook for another 15-20 seconds.
(8) Sprinkle white or black sesame seeds on top of bagels and bake in preheated oven on top and bottom heat for 10-15 minutes or until golden brown on top.
(9) Remove the bagels and allow them to cool completely, then you can cut them, spread them with butter, cheese, jam, and other ingredients, and serve.
